We are officially back from the beach! I am so sad that the week flew by so fast, but we had the best time! I was surprised at how much relaxation I got with a one year old. Thankfully Sawyer slept great, took two good 2 hour naps a day and liked the beach for the most part. All in all it couldn't of been better.  


I will share pictures and stories later on..... for now I wanted to share the absolute BEST Fish Taco recipe. My sister-in-law found this recipe from Southern Living and we made it this week at the beach.  Please try this out even if you aren't a fish lover, I think anyone could enjoy this one. There are three recipes posted but they all go together. 

Spicy Fish Tacos
For the Fish.....
- 6 (6 oz) flounder fillets (really use any fresh fish you can find, we used Mahi Mahi and it was perfect!)
- 1 lime
- 2 TB chili powder
- 2 ts Salt
- 2 ts ground cumin
- 1/2 ts ground red pepper


1. Place fish in a shallow dish. Squeeze lime over all the fish.
2. Combine seasonings, coat the fish generously with spices. 
3. Grill seasoned fish


For the Southwest Cream Sauce...
- 1 garlic clove, minced
- 1 (16 oz) container sour cream
- 2 TB finely chopped red onion
- 1 ts ground cumin
- 1/2 ts ground red pepper
- 1/4 ts salt
- 2 TB fresh cilantro
- 2 TB fresh lime juice


4.  whisk all ingredients until mixed and smooth. Chill until ready to serve.


For Mango Salsa...
- 1 mango chopped
- 1 jalepeno seeded and finely chopped
- 1 garlic clove minced
- 1 TB freshly squeezed lime juice
- 1 TB finely chopped red onion
- 1 TB chopped cilantro
- 1/4 ts salt


5. Stir together all ingredients and chill until ready to serve.


 Serve grilled fish with this mango salsa, southwest cream sauce, chopped tomatoes, tortillas, and lettuce and you have got the Yummiest meal!!
