We spent a family weekend at home and had the best time! It's a rare occasion that we are all three in town and home with nothing to do, so we took major advantage.
Saturday my wonderful hubs let me sleep in and I slept about 12 hours total and it was GLORIOUS! After we all woke up we headed to Gentry to the Drive through Safari. It was Sawyer's first time and we were excited to see his reaction.
This zoo is so fun because you can hold and pet billy goats, pigs, kangaroos, monkeys, baby tigers, turtles, rabbits, name it they have it there! Once you are sick of petting these animals up close you then get in your car and drive through the safari. It is an experience! They have camels, buffalo, deer, lamas, zebras, bears, baboons, wolves, and a lot of them will come up right to your window.
Sawyer was enthralled with the entire experience! HE LOVED LOVED LOVED IT!! We thought he would get uninterested eventually, but he laughed, pointed and squealed with excitement the entire two hours we were there. It was a ball!
After the zoo we went to a down home hole in the wall place called "Cathy's Corner" in Siloam Springs. It was so yummy so if you are ever in that area definitely plan to eat there. After our big meal and big outing we all took long naps at home and then headed back out for a fabulous dinner at Greenhouse Grill and then headed to a park/baseball park before bedtime. We let Sawyer run around a vacant baseball field and he thought he was hot stuff.
1/2 of a 4 oz. low fat cream cheese
1/4 cup low fat sour cream
1/4 cup minced green onions
1/2 cup freshly grated parmesan cheese
6 slices bacon, cooked very crisp and crumbled
1 cup reduced fat sharp cheddar cheese
Preheat oven to 350 F. Cut out stem and core from cauliflower, and cut into small pieces. Cook in large pot of boiling water until cauliflower is tender, but not overly soft. Drain well and mash with potato masher, leaving some chunks. Mix in cream cheese, sour cream, green onion, Parmesan, and 3/4 of the bacon. (I used a hand mixer to mix it all together)
Spread evenly in an 8 X 8 inch glass casserole dish. Sprinkle with cheddar cheese and reserved bacon. Bake 20-30 minutes, or until hot and bubbly.
