Dinner in a Pumpkin
-1 medium pumpkin -3 ribs celery, chopped
-¼ cup honey -¼ cup soy sauce
-¼ C. brown sugar -1 C. orange juice
-2 Tbs. margarine, melted -2 Tbs. parsley flakes
-¾ C. ground beef - 1 4 oz. can, sliced
-¼ tsp. salt mushrooms, drained
-¼ tsp. black pepper -1- 10 oz. can Golden
-1/3 C. chopped onion Mushroom soup
-1/3 C. sweet red & green pepper, - ½ C. sliced roasted almonds,
-½ tsp. ginger - 1 pkg. Seasoned Long Grain
Wild Rice, prepared (according to pkg directions)
Cut top from pumpkin and save. Scoop out strings and seeds. Combine honey, 2 Tbs. brown sugar and magarine and brush on inside of pumpkin. Set pumpkin aside.
Combine ground beef, salt and pepper, brown, drain, and set aside. In a saucepan, mix onion, peppers, celery, soy sauce, and orange juice. Cover, simmer 10 minutes. Combine meat and vegetable mixture and add remaining ingredients, reserving 1 Tbs. almonds. Transfer mixture to hollowed pumpkin.
Replace pumpkin top. Brush entire surface of pumpkin with olive oil and place on baking sheet. Bake @ 375 degrees for l 1/2 hr. on the lowest oven rack. Just before serving, sprinkle with remaining almonds. Keep covered until serving time.
Serves 8 – 10.
