Okay back to some Yummy Mondays! Sorry I have slacking! That move got the best of me.
This recipe is definitely one to store away for an easy GO TO recipe. It is DELICIOUS! I found it in our church cookbook a few weeks ago and Andrew and I both LOVED it.
- 2 cup crumbled cheese-it crackers (I use my blender)
- 2 TB taco seasoning
Roll 4-6 cut up boneless chicken breast in the mixture and place in a 9X13 pan
Sauté 4 green onions in 2 TB butter
ADD: 2 cups whipping cream (I use 1/2 and 1/2), 1 cup mozzarella, 1 cup cheddar cheese, 1 can chopped green chilies
- Pour this mixture over the chicken pieces.
- Bake at 350 degrees for 45 minutes
I serve this with plain white rice or mexican rice and just pour the chicken and sauce over the rice. Enjoy!!
