To be honest I was not too excited about this snow day only because Sawyer has been sick since the Sunday before and we have been stuck in the house for an entire week. Sawyer and I were very ready to get out since he was better on Friday. But we made the best of it and I even took my sick baby out to see the snow (I know so cruel!) but he had to witness the ridiculous blizzard! We also entertained ourselves at home by EATING, EATING, EATING!!! I made homemade chocolate chip cookies, taco soup and cornbread and of course we played with the babe and watched some great movies (Hurtlocker is a must see!). So even though I was a little disappointed about the snow it really ended up being a fun day with my little family! I was so glad to have my husband home!
Playing in the fed ex box, oh so fun. Maybe I'll use this to ship him off to Grandmama's houseon his fussy days!
Taco soup is seriously Andrew's favorite meal, ecspecially with my skillet cornbread. He was a happy noony(for those of you who don't know us, his nickname)! (See bottom for recipe)

Sweet goodness to end our night. We put Sawyer down, lit the fire and watched a good movie. Couldn't ask for a better Snow day!

I am sure many of you have taco soup recipes. It is a staple for many, but I have tried over 4 different recipes and not only is this the easiest it is by far our favorite!
-1 Can pinto beans
-1 can kidney beans
-1 can rotel
-1 15 oz can diced tomotoes
-1 8 oz tomoate sauce
-1 pkg dry ranch
-1 pkg taco seasoning
- 1 1/2 lb ground beaf
-1 small onion
- dashes of Garlic Salt
1. Brown mean with onion and garlic salt, Drain liquid after browned
2. Mix all ingredients together and simmer in a large saucepan or crockpot untill hot. (The longer it simmers, the better. Sometimes I keep it warm all day)
3. Serve with sour cream, cheese, cornbread or fritos
Sweet Skillet Cornbread
-1 can sweet creamed corn
-1 pkg Jiffy cornmeal
-1/2 cup sour cream
-1/4 cup milk
- 2 TB sugar
-1/2 stick of butter
- Preaheat oven to 350 degrees and place the stick of butter in a cast iron skillet. Stick in the oven while preheating to melt the butter. Take the skillet out when it looks like all the butter is melted.
- Mix together all the remaining ingredients and pour into the skillet with the melted butter.
-Place in the oven for approx. 25 minutes. Depending on the size of your skillet just watch it to make sure it is firm in the middle it may take a shorter or longer amount of time.
That's it! Seriously by far the best cornbread you can make. It is absolutely impossible for this to turn out dry or bland. Hope ya'll enjoy!
